Abstract: Rabbit meat is tender, tasty, low in fat and very nutritious. It is one of the meats of fine gourmets. It is also, par excellence, the meat of people with cardiovascular problems placed on a diet, because it contains a very low level of cholesterol. (Substance whose excess constitutes a danger for the human body). In addition, the rabbit is a lagomorph mammal, herbivore par excellence, which can feed on fodder, cereal seeds, kitchen scraps, harvest residues and compound feed. Its diet therefore does not necessarily compete with that of humans.......
