Abstract: Present days consumers demand consistent, defect free, high quality products. One of the key areas for production of high quality food is the quality of the raw materials and ingredients used. Raw materials can bring a significant variation to the process. The lot to lot variability and sources of raw material may look marginal, but it has profound consequences. The physical and chemical composition of raw materials can have a drastic impact on the operating efficiency of the plant. A defective raw material can lead to the process being out of control and the product being outside specifications.........
